Add a 1/4 cup of the Chicken mixture into the tortilla shells and roll up so that all ends are sealed. I add mine to the side so I can fully roll the shells up and tuck in the sides. I also like to warm up the tortillas in the microwave or oven or skillet to make the shells softer (or just leave them on the counter while you warm up the chicken).
Place rolled shells seam side down into a baking pan. Add enchilada sauce to the top of the shells along with your favorite cheese. Bake in the oven at 350 degrees until cheese is melty, about 20 minutes.
